Dairy-free chocolate mousse




Happy almost Valentine’s Day!  Just a quick idea for a sweet treat on Valentine’s Day if you’re game. 
I’m always looking for creamy delicious dairy-free alternatives for my little ones but they are quite particular in their tastes so it isn’t always an easy feat.  This recipe was appealing on all counts as it had few ingredients all of which I had on hand (always a bonus), involved coconut and was a hit with both my children.  In fact, the consensus was that it was actually a bit too chocolatey.       We decided that next time I should put a bit less of the cocoa or perhaps mixing it with some whipped coconut cream to lighten the whole mousse in general (ok, that one was my idea, wish I thought of it sooner).
Anyway, one child enjoyed the mousse with sliced strawberries the other with mini chocolate chips and there were smiles all around.     Enjoy.  

Coconut cream chocolate mousse

1 cup full fat canned coconut milk, chilled (I used 1 can of Trader Joe's extra thick and rich brand but you may 
need 2 cans if you're getting regular canned coconut milk)

4-5  Tbsp cocoa (I used 5, thus the richness)                                                                     photo (26)

4 Tbsp honey

1 tsp vanilla


Chill the coconut milk overnight or for several hours before preparing.  You want to scoop out only the cream portion once it is chilled (it will be hardened on top).

Add the rest of the ingredients and beat with a mixer for 2-3 minutes until whipped together well.

Portion out into bowls or chill in the mixing bowl to divide later, doesn’t matter.  Allow at least an hour or so in the refrigerator.

Add your favorite chocolate accompaniments and enjoy !
