Simple recipe for staying cool

With a heat index of 94 degrees last week we were all looking for ways to cool off here in NY.  I have fond memories of my mom brewing deliciously fruity teas by the kitchen window lite with the mid-day sun so I decided to brew my cooling, Pitta reducing minted iced tea that way as well.
After steeping for 4 hours, I strained the fresh mint and tea bags, allowed to cool and then enjoyed over a little ice with a mint sprig.

Fresh mint iced tea

1/2 c fresh mint leaves (I used spearmint)

3 tea bags (I chose Moroccan mint green tea)

2T honey

4c water

Steep all ingredients, strain and enjoy. Stay cool.
